Dine in Style with Champagne at Cringletie

Cringletie is hosting a gourmet black tie Champagne dinner on Thursday 26 March, which will be co-hosted by Benjamin Fourmon, Managing Director of family-owned Champagne house, Joseph Perrier.

Located in an area of outstanding natural beauty near Peebles, just 30 minutes south of Edinburgh, Cringletie is a magnificent 15-bedroom hotel which has recently been awarded 2 AA Rosettes. The impressive property is set on a 28 acre estate which provides the perfect setting for a stylish and indulgent Champagne dinner.

The evening will begin at 7pm with a Champagne and canapé reception in the Maguire Lounge. A choice of brioche crumbed chicken lollipops, beetroot glazed cured salmon and crispy tomato cones filled with smoked goats cheese mousse, will be served, all of which will be accompanied by a classic Joseph Perrier ‘Cuvee Royale’ Brut.

This will be followed by a sumptuous five-course dinner devised by Head Chef, Iain Gourlay matched with the exquisite Joseph Perrier Champagnes in the hotel’s Sutherland Restaurant.

Pan seared Orkney scallop, slow cooked pork belly and textures of cauliflower will be served with Joseph Perrier Blanc de Blancs before diners tuck in to a torchon of foi gras, sour cherry compote, toasted brioche and a Joseph Perrier Cuvée Royale N.V. Rosé.

The main course will be a roasted fillet of Tweed Valley venison, spiced giant cous cous, red wine poached salsify and venison sauce accompanied by a delectable Joseph Perrier Cuvée Royale Vintage 2008.

This will be followed by a refreshing strawberry and basil sorbet with black pepper crisp and a fruity Joseph Perrier Esprit de Victoria Rosé Vintage 2010. For dessert there will be frozen macadamia parfait, port-soaked pears, yoghurt crisps and yoghurt gel, perfectly rounded off with a Joseph Perrier Cuvée Royale N.V. Demi-Sec.

Benjamin Fourmon will be attendance at the dinner to formally present the champagnes and to tell the fascinating story of his family and its unique history as producers of world-famous Champagne. Martin Gamman, Master of Wines will also be on hand to discuss the Champagne and answer any questions.

During the evening, musical entertainment will be provided by one of Scotland’s most talented harpists, Charlotte Petersen.

Priced at £125 per person, early booking is advisable as this is sure to be an extremely popular event. Payment will be taken at the time of booking.

Accommodation in one of Cringletie’s beautiful rooms is available at special rates for those wishing to make a night of it, from £75 per person bed and breakfast, based on double occupancy.
