Black Truffle Menu at Castle Terrace
Throughout the month of December, Chef Dominic Jack’s award winning Castle Terrace Restaurant in Edinburgh is serving an exclusive Black Truffle Menu. Having cooked for many years in France at l’Arpège, Les Elysées and Taillevent, Dominic was inspired by the annual excitement that greets the arrival of France’s truffle season for his new menu. Guests will begin with canapés before moving on to duck liver ballotine, quince and spiced bread; seared hand-dived Orkney scallop served with Jerusalem artichoke and bacon; and seared fillet of North Sea cod, served on a salt cod brandade, all covered with a shaving of fresh black truffle. For the main event, there’s Borders pheasant with mushroom, cabbage and grapes; and, for dessert, an innovative black truffle soufflé.
The seasonal black truffle menu is priced at £130pp. Diners can also opt for a matching wine flight which includes a glass of Philipponnat Royale Reserve Champagne followed by a different glass of wine with each course (£65pp); or there’s the exclusive wine flight, with Champagne and wines cherry-picked by Head Sommelier Joel Bastian from Castle Terrace’s exclusive range (£140pp).
